Brand, not at all. Quality, as others have stated, yes. The hairline, the stiffness of the hair. The hair that blows in the wind is of the highest quality!! (not that I would be thrilled with the netting showing!) Fit has nothing to do with the price of the piece, rather with the sheitel macher - who should make sure it fits right, and the wearer who needs to be able to put it on properly.

My wife cannot tell the brand, but can surely tell quality and fit.

There have been times where I could not even tell if its a shaitel or real hair (and the mistake went both ways).

But I could tell you make and model of a car with probably 98% accuracy

I can't really tell the difference between different brands but I can tell quality. Some wigs have hairlines that make them look very ..uh...wiggy. Some have hair that looks like straw. Some have an unnatural shine. A lot of the differences are in the construction or when you feel the hair.

Well, you can generally pick out a Paula Young shaitel from a Custom du Jour. Today was quite breezy and as we were walking outside, I noticed a lady in front of me whose nice, human-hair looking shaitel was being blown so much by the wind that you could see the lines of the netting underneath. If I were to pay hundreds for a wig I would expect it to withstand gale force winds, at least.

I doubt you can identify shaitels from how they look. I've generally stayed with the same shaitel macher as I know her quality and trust her to give me what I want (with the exception of one or two shaitels that I bought on sale elsewhere). I wouldn't even know my own shaitel macher's shaitels, though. Once they're on a head, you can't see how it was measured to fit, how it matched the request of the customer in terms of texture, weight, color, etc.

driving recently with my brother, he was naming every type and model of every car, plus whatever else there is to say about them. i was amazed, sort of. how can you tell apart the millions of cars you see on the street every day. then i told him its probably like the married women who can tell you the company of a sheitel just by looking at it. then two people told me that it's impossible to do that, because hair is hair, and there is only so much you can do to make it different from the next. is this true, or is it possible to tell what company a sheitel is just by looking at it?
