On Yom Tov we get to use milchig dishes!!
We don't use the same Challah board for Shabbos/Yom Tov and Pesach, though it's probably muttar (see Shach Y.D. 91:3, I think).
yomim noraim we use a white challah cover.
and 1 yuntif we go even further (gasp) than just a dif challah cover or challah board. in fact, its not even we dont even use challah! :)

Yes, I fully realize that there is possibly some shittah that says that this is against halacha, probably on the level of yeharaig v'al ya'avor and that it comes with a loss of one's chelek in Olam HaBah.

we use a new challa board for pessach, since noone can be bothered brushing off the crumbs from the old one. the challa tastes slightly different though...
I bought my mother in law a new challa knife last year! she didn't really appreciate it, I told her it was for pesach!

There is a Halocho, that one should be better dressed on Yom Tov than Shabbos, as "Simcha" has stronger obligations than does "Oneg". I assume this is what WIY is referring to.
Last time I was in Meah Shearim Geulah window shopping, I saw in the windows, a Challa cover saying "LichVod Shovu'os". Sounds like an ideal gift for the older couple, who already have everything they need.
Meanwhile I observe this Halocho, by keeping a couple of fancier neckties for Yom Tov, than I wear on Shabbos.
speaking of challa boards, actually it is preferable not to have a board at all. the best zecher l'man is a thin material beneath the lechem mishne and a thin material above, similar to the dew that was above and below the man. very timely thread. nice.
But what happens when the material is full of holes?
then change the material. there is a way to cut the challah without cutting the material.
