Easy Blintz Souffle

    Easy Blintz Souffle- My family eats mostly fresh food but,this is our monthly treat.

    55 min | 10 min prep

    SERVES 8

    2 (6 count) packages cheese or any flavor blintzes, defrosted
    1/4 lb butter/healthy butter substitute for baking
    1 1/2 cups sour cream-any kind
    1/2 teaspoon salt
    4 eggs, well beaten
    3 tablespoons sugar/sugar substitute
    1 teaspoon vanilla
    1 tablespoon frozen orange juice, undiluted (optional.

    Melt butter in an 9"x13" pan.
    Place blintzes over butter in one layer.
    Blend the other ingredients with the eggs and pour over the blintzes.
    Bake 45 minutes at 350°F or until the top starts to brown.
    The souffle can be served with powdered sugar, strawberries, or any other fruit.

    Here's an even easier version:
    12 frozen blintzes
    2 pints sour cream (1 large container)
    1/2 cup sugar
    1 tsp. vanilla
    1/4 cup orange juice
    4 eggs
    lay blintzes in single layer.
    mix everything else together.
    pour over blintzes.
    bake at 350 for 1 hour.

    Pasta with fresh herbs and tomato sauce is an easy and delicious choice. There are many good pareve soups that can supplement the meal if pasta is not filling enough. A few that come to mind are mushroom soup, split pea soup, and sweet potato soup. Salads and fresh vegetables are also healthy additions to any meal, and hard boiled eggs add protein.
