Another easy, and dairy, weeknight dinner. Or summer lunch…
½ cup diced soy pepperoni
1 (8-ounced) can sliced mushrooms, drained
5 eggs, beaten,
1 cup milk
¼ teaspoon oregano
¼ teaspoon basil
1/8 teaspoon black pepper
8 ounces grated mozzarella cheese
Preheat oven to 400 degrees. Lightly grease a 9-inch pie pan (preferably deep dish).
In a large bowl, whisk together pepperoni, mushrooms, eggs, milk, spices and ½ the cheese. Pour into prepared pan. Sprinkle remaining cheese over the top and bake for 25 minutes, or until cheese is lightly browned.
