agree with deiya, but here is another easy relatively diabetic friendly way to make chicken for the seder, saute onions diced carrots and tomatoes(if you use them). Add the chicken skin on and let it stew in it’s own juices. add whatever spices you like. it’s sort of like fricassed chicken, and tastes delicious. if you don’t use tomatoes or spices, leave them out, I did this last year and it was really good. it also warms up really well so it can be cooked before or used as left overs.
