Do you have a good solid reason for waiting until next week? Is there any reason to think that by next week there will be any change (aside from his owing you an additional week’s pay)? If not, what are you waiting for?
I understand you want to be nice and mentchlichkeit about this, but unless you’re going to volunteer to work for a week for free, you have to do this TODAY. If he hasn’t been paying you, you owe him no considerations (such as the extra week) at all aside from basic civility.
Besides, the week you’re working for free will also delay you a week in your search for a paying job.
