I find it hard NOT to eat low carb…except for the sedorim. I wonder about all these people who are excited by quinoa as if they just have to have a starch in every meal.
I suppose if you are a vegan who doesn’t eat kitniyos, you’d need to eat quinoa because of the protein. I don’t know of any other vegan sources of protein that aren’t kitniyos or chometz.
