According to the mehalaich of the Shtusenstuffer Rebbe, square kneidelach are actually a hiddur mitzvah, and are the l’chatchila derech of forming them. Round kneidlach are a bedi’eved technique only matir’ed due to the rushing that is part of erev Shabbas preparations.
Parsely actually helps one to be (ahem, ahem) yotzei the kneidlach, and prevent the malacha of boneh inside one’s kishkes, -but, alas, kishke is an issue for another thread! 🙂
