    4 pounds apples

    1 lemon

    2 cinnamon sticks

    1/2 cup apple juice, cider or water

    Honey, brown sugar or maple syrup to taste.

    Quarter the apples and the lemon. Place in a heavy pot with the cinnamon sticks. Add apple juice, cider or water. Cover, bring to a boil, and let simmer over low heat, stirring occasionally. You may want to add some liquid. Cook about 20 minutes, or until apples are soft. Remove cinnamon sticks. Put the sauce through a food mill and adjust seasoning by adding honey, brown sugar or maple syrup to taste.

    Peel and core as many yellow apples as you’re able. Put in a pot with an inch or two of water, and some lemon juice (to prevent browning). Simmer, and simmer, and simmer till the apples mush on their own.

    variations – add sugar, and/or cinnamon sticks, and/or frozen strawberries

    APPLESAUCE????? Please – the only thing meant to go on a latke is sour cream! Applesauce is only b’sh’as had’chak when I am making it for fleishigs.

    quick applesauce ; adjust amounts as per how many people your feeding

    peel and chop 8 apples place in large microwave safe dish with 1/4 cup water ,

    1/2t cinnamon,1/4 t ginger optional 3T sugar cover microwave on high 5 minutes stir well microwave additional 3-5 minutes till done, this is chunky style makes approx 4 cups

    APPLE SAUCE?!! ewww! I eat em plain or with some heinz ketchup.

    Shikur; if your going thru the trouble of making applesauce,

    why not add two tablespoon of bourbon?

    not for kids though, unless…. it’s past their bed time! 😉

    Applesauce on latkes is so yummy when the latkes are hot. Less appealing when the latkes are cold (like leftovers). Then again, I’m not into cold latkes in general.

    Has anyone had ice cream on latkes?

    No Hashem definitely wants latkes and applesauce to go together. They’re beshert.

    I grew up with applesauce and latkes. My wife didn’t. It’s a cultural thing, I guess.
