    Honey Cake

    13/4 cup flour

3/4 cup wheat germ, any flavor

    3/4 cup raisins

    1/3 cup sugar

    4 t. backing powder

    1 t. baking soda

    1t. cinnamon

    1/2 cup of honey

    1/2 cup coffee, cooled

    1/4 cup vegetable oil

    5 egg whites, slightly beaten

2 t. grated orange peel (optional)

1 cup peeled and chopped apple

Heat oven to 350. Grease bottom of 8 or 9 inch pan. Combine first seven ingredients. In separate bowl, combine honey, coffee, oil, egg whites and orange peel; add to dry ingredients, mixing well. stir in apple. Pour into prepared pan. Bake about 50 minutes or until wooden pick inserted in center comes out clean and top is dark brown.

Yeah, too healthy, you should put in 3/4 cup of chocolate chips…no, NOT really, just joking. If you omit the wheat germ maybe you could just put in some more flour instead? try it and let us know how it was. Honestly, though, it doesn’t taste like wheat germ cake, it’s yummy and my picky people over here do like it. but if you are a chocolate chip cookie and brownie person…skip this and go for it!

I am more a lemon-meringue pie and cheesecake kind of person. But For the Yomim Noraim through Simchas Torah, we have GOT to have lots and lots of really good homemade honey cake, much of which never makes it to the yom tov tisch.

How do you know how much fat your cake has per serving?

Btw the chocolate chips idea sounds so yummy for honey cake! 🍯🍫🍰😄
