Put some salad in the blender with spices and call it a dressing.

Pesto is like a salad but with oil — so maybe it’s salad dressing?
What about salsa? That’s like a salad too.
Mashed avocado works in place of oil/mayo for guacamole. I’d still add lemon or preferably lime juice for flavor and color retention, as well as salt, so I wouldn’t exactly call it a dressing.
Avocado is so good.
