You could if you want. But if you don’t want and/or you took the amount you wanted, then by all means leave the rest in the bottle. It won’t evaporate.
But it might spoil.
I finished a bottle of 15 year old Glenfiddich today when I made kiddish. I made kiddish, drank, ate, and noticed there was only a little bit left . . . so I drank it.
Now if you would have left that half a shot there, in three years you would have had Glenfidditch 18.
I did almost the same think as takahmamash, except that it wasn’t Glenfiddich, (and there wasn’t only a bit left…).
