Cranberry Chipotle Chicken


An easy Yom Tov or weeknight dish

2 chickens, cut into 1/8th’s

2 (16 ounce) cans whole cranberry sauce

1 cup barbecue sauce

2 canned chipotle peppers in adobo sauce, finely chopped

Preheat oven to 350 degrees.  Mix together all sauce ingredients and pour over chicken.  Bake for 1 hour, uncovered.  Baste with sauce, cover with foil and bake an additional hour.
