In the Bizarre Foods show they show Headcheese (in Spain) I think its actually made out of bits of the head thats why its called Head (not sure about the cheese part) and then its congealed with a gelatin and is served like cold cuts.

In the Philippines they have a street food called Balut, which is a fertilized duck (or chicken) egg that has a nearly fully developed embryo inside. It is then hardboiled and eaten out of the shell. *shudder*
