If you are concerned about nutrition and cardiac health, consider substituting a tofu product or soy-based beef in lieu of some or all of the red meat and go very light on the salt. It is very easy to make a healthy chulent that tastes better than any recipe from the alte heim but equally important, allows you to fulfill the mitzvah of “u’shamartem es nafshosechem”.
