The Mayanai Shel Torah explains that Adam justified his actions that he did not violate Hashem’s commandment from minos, non-belief but from taaveh, desire. For the former a small amount would have created the desired goal of yodea tov vera, to distinguish between good and bad (then justify the bad as good) but I am not satisfied with my eating as I desire to eat more, so I did not eat from minos.
