Whole Wheat Banana Muffins
Makes approx 16 muffins.
2 ripe bananas – mash with fork or blend 10-15 seconds
1/2 cup oil
1/2 cup honey
1/4 cup orange juice or apple juice
2 eggs
1 and 1/2 cups whole wheat flour
1 cup oats
1 tsp baking soda
Optional: figs, dates (I’ve had too many of those recently!), or my favorite – mini cholocate chips
Mix everything together well with a fork. Fill muffin holders 2/3 full. Bake 18-20 minutes. I bake them closer to 18 minutes so they’re a bit more “wet”. They freeze very well. Can reheat in microwave for 25 seconds so that the chocolate chips remelt, yum!
