IIRC, Rabbi Munk in The World of Prayer talks about kapparos. What I liked was his explanation of the source of using money, not at all as a bedieved for the squeamish. OTOH, there is something powerful about using a live animal. (Never heard of fish, don’t believe he mentions it but could well be wrong.)
