While I have no problem with idea of using chickens, the system for doing it needs to be fixed. Every year there are reports of violations and fines being handed out. It creates a huge chillul Hashem, and I believe that should come before your family’s minhag. I don’t think it’s considered a minhag to use a chicken over money anyway – the minhag would be whether to do kaparos at all.
