I have a really good blueberry muffin recipe:

1 1/2 c whole wheat flour

2 tsp. baking powder

1/2 tsp. salt

3 T oil

3 T apple sauce

1/2 c sugar

1 egg

1 tsp. vanilla

1/2 c soy milk

Mix above ingredients. Then pour in 3/4 c bluebberies and mix lightly with a spoon.

Topping: (Before you put in oven)

1 T oil

2 T brown sugar

1/4 tsp. cinnamon

1/4 c chopped walnuts (optional)

Set oven to 400 degrees. Bake for 18-20 minutes.
