I think the “cooking” process affects the taste of the wine. That’s one reason kosher wine often isn’t considered as high-quality as non-kosher, and isn’t generally mentioned in wine columns (one notable exception: every year, the Wall Street Journal devotes one of its weekly wine columns to kosher wines for the seder).
