Please see Rav Binyomin Bamberger’s sefer, “Shorshei Minhag Ashkenaz”, vol. 1, pages 233-264. He traces the history of the pronunciation of the cholam from the gemara through the rishonim and achronim. It is very thoroughly written, and the conclusion is very clear cut.
