Tell them lots of stories. Play lots of games. Particular, play games that involve getting up and running around or at least movement at the table.
Forget about learning–2nd grade kids don’t need to be learning for 1 or 2 hours a day while in camp. They learn quite enough in school all year. Forget about davening–2nd grade kids don’t know enough to daven.
I suppose if you really must, you can occasionally play a game that involves chumash vocabulary and dikduk. (Seriously, teach them pre-fixes and suffixes if you can.)
