Here’s a different salad, for a change. Very low carb.

Hearts of Palm Salad

1 can hearts of palm

1 pint grape tomatoes

1 avocado, can be omitted if you want to cut the fat & calories

1/2 small red onion, thinly sliced

Oil and vinegar (1/4 cup each)

Salt and pepper

sugar or substitute to taste

Toss all together and refrigerate.
