cherrybim: I don’t know, we just don’t have a problem with it. Maybe you’re overcooking it, or not putting in enough water? We usually cover the fish about 3/4 of the way up with water, cook for 45 minutes, flip it over, and cook for another 45 minutes. Make sure the flame is low so the water doesn’t boil out.
