I just want to make one thing clear (on topic). My family is a russian baal tshuvah, but my grandma grew up in a shtetl in Ukraine, and one of the things she remembers from her childhood was doing kaporos on erev yom kippur, with chickens, and shechting them, and giving it as a nedoova to the ohrmeleit (aniyim). She also remembers making matzos and several other things. Doing kapporos with chickens is an experience not even soviet jews would forget. It is a minhag etched into the nishomos of yidden.
