Most rabbis understand the difference between themselves and the Torah. Waiting for the rabbi slows the procession of the Torah, and moving promptly to your seat after showing your respect for the Torah is not rude – it allows others to do likewise. And most rabbis have aches in their right hand by the end of Shabbos, and one less handshake is probably appreciated.
