	Not dijon. That is a sacrilege. You need good rye and spicy brown deli mustard. Some garlic pickles on the side, maybe a knish. And definitely a Dr. Brown’s soda.
Tongue polonaise, with sweet and sour sauce, is a different preparation altogether.
