The way I make it, I am certain it is mezonos maaseh kedeirah, and thus is mezonos no matter how many seudos you are koveah.
Recipe:
Take about 1 and a quarter hand matzos, and smoosh up in a pot.
Run hot water from your sink until very hot, then fill up the pot with it to cover the matzo.
Put on stove on high for about 15 seconds.
Drain the water and smoosh it all out of the matza. (You may need to run cold water in to cool it down so you can smoosh.
Add two eggs, kosher salt, and pepper, and mix mix mix.
Heat a cast iron skillet with several tablespoons of oil.
Dump the mush in, and spread out. Cook on medium low.
After a few minutes, pick up the piece with a wide spatula, and turn off the flame. Standing back, flip it over into the pan, splattering oil all over yourself.
Turn flame back on and cook on medium for a few more minutes.
Eat. Don’t put any cream cheese on. Throw the cream cheese at your sister in law (who by now is usually throwing dirty diapers at you because of various things you have been telling your nephew.)
