Apple Cake

    2/3 cup oil

    1/3 cup orange juice

    2/3 t.vanilla (1/2 t plus 1/8 t)

    2 eggs

    1 cup sugar

    2 1/2 cups flour

    2 1/2 t. baking powder

    4-5 large apples, sliced


    Mix together liquid ingredients. Slowly add eggs, sugar, flour and baking powder to form a thick mixture. Pour half of the batter into a greased 9×13. Put sliced apples on top of batter. Add remaining batter and spread on top of apples. Sprinkle with cinnamon. Bake at 350 for about one hour.


    Thanks a bunch for this recipe! Question, which type of apples would you suggest with this recipe, and should they be hard or softer (sorry for my ignorance, but I have never made a cake like this before)? I wanted to send my father something for the holidays, and his favorite cake happens to be the apple cake, and this one sounds delicious. I’ll let you know how it turns out.
