i cant seem to find a good one in either of the quick & kosher cookbooks or online…anyone have one!!!???
just cut up cucumbers into cute little cubes, then add basil, and vinegar or if you like instead add lemon juice and cut up a small onion into thin strips. Voila
6-8 cucmbers – peeled and sliced
1 small onion – sliced
1/2 cup vinegar
1/2 cup sugar
1/2 tsp salt
1 cup water
Mix well and let sit overnight.
Slice the cucumbers thinly and sprinkle with salt. Let sit for about 20 minutes because this pulls out the excess water. Make a mixture out of vinegar, sugar and some more salt. How much depends on how many cukes you are using. Experiment with the amounts to suit your taste. If you like the taste of dill, you can add some.
you dont have to make it with vinegar – just make a good lemonade (lemon juice, water, sugar) and pour on top of cukes that have been sitting in salt for a few minutes… you can add dill if you like
i was going to give you my recipe but ‘understand’ already did.its really good and easy. everyone loves it. you can add some pepper if you like. i also only
peel the cukes in stripes .it looks very nice and had added vitamins.
