Tours are silly, IMHO. What’s wrong with booking a flight, buying train tickets (or renting a car), finding accommodation online or when you get there, and just managing? Give yourself the freedom of going where you want to go, when you want to go, where to stay longer and where to stay for 5 minutes, be free. That’s the fun thing about vacation.
I could never be on any sort of organized tour….
Obviously one thing in favor of organized tours is kashrus, but with some common sense and willingness to keep it simple, you can manage quite well. Personally I don’t mind living on cookies, plain dark chocolate, fruits and vegetables, Cola and Fanta – keeping it simple. One can buy eggs and plain butter anywhere as well. Carry a tiny camping stove for cooking and one or two little super-lightweight camping pots, and you can manage quite well.
What do you prefer: organized tours or do-it-yourself?

I was in Italy last summer and it was mostly do-it-yourself but I took a Day trip to Florence from Rome and I found out later they did not take us to the Uffizzi.. I was pretty mad.
Do it yourself you can go wherever you want to
