Theyre yum. Anyone have a good recipe for a muffin with no sugar, no honey?August 15, 2011 2:07 am at 2:07 am #797967tomim tihyeMember
Why can’t you just substitute the sugar in any recipe with agave nectar, apple juice concentrate, prune butter, splenda, or whatever?
I only bake with whole wheat flour, and I rarely use white sugar.
I substitute with a combination of agave nectar and stevia or xylitol (natural sugar from birch tree).August 15, 2011 2:36 am at 2:36 am #797968
The texture of these mini muffins at 45 calories is amazing. Im looking for a recipe that someone can vouch for as being a similar texture.
As far as agave, I read there are health risks. I found a recipe using apple sauce and juice concentrate, but Im not sure what the texture will be like.August 15, 2011 5:28 am at 5:28 am #797969kapustaParticipant
Apple sauce (or any fruit puree) is a standard substitute for a fat. IME it didn’t change the texture at all. I agree with tomim tihye that its probably easiest to start out with a base recipe and then change it to fit the requirements you want.
Sugar also has long term health risks, you have to decide which can be more potentially dangerous.
tomim, do you find that baked goods come out heavier or with an aftertaste when using ww flour?August 15, 2011 8:02 pm at 8:02 pm #797970tomim tihyeMember
Ofcourse: Oh no, even agave has health risks? What’s the concern with it?
kapusta: I only use the Shibolim extra fine ww flour as it seems to keep cakes lighter and without aftertaste.
I should confess that I don’t bake much cake, mostly only a marble cake with 6 eggs, which is probably what keeps it light, a crispy/chewy oatmeal-choc chip cake, and a super-moist oatmeal-choc chip cake. Nobody misses the white flour with these!
I do bake Challah, but hubby’s makpid on having it white, so it’s 5/6 white.August 16, 2011 7:36 am at 7:36 am #797971August 16, 2011 9:49 am at 9:49 am #797972want to be a tzadikMember
I don’t think any recipe will be able to match the taste and texture of muffin delite muffins. I have tried making my own recipes and tried other heimish companies but nothing compares. If anyone finds a recipe for a similar tasting muffin, please post.August 16, 2011 1:21 pm at 1:21 pm #797973
Here’s a recipe that sounds good with no sugar (I havent tried it):
Basic Blueberry Muffins
1/2 cup apple juice concentrate
1/2 cup sugar-free applesauce
2 large eggs
1/4 cup oil
1/2 teaspoon salt
1-3/4 cups flour
1 teaspoon baking soda
1 cup frozen or fresh blueberries
Preheat your oven to 400 degress F. Pour the batter into well oiled muffin tins. If you prefer, you can also use paper cups. Bake your blueberry muffins for 20 minutes. Take them out of the muffin tins as soon as possible and serve them hot.

Not sweet enough for my taste,
Not like Muffin Delite but very good texture!
Easy to combine ingredients in one bowl, with a whisk.
I think Ill try it next time with some more concentrate.August 16, 2011 3:04 pm at 3:04 pm #797975ImaofthreeParticipant
might come out too wet if you put in more concentrate so try some splenda or a bit of sugar or honey.
