If it’s low-fat, it’s not potato kugel. Unless you follow WIY’s suggestion.November 11, 2010 5:51 pm at 5:51 pm #708241Y.W. EditorKeymaster
Haven’t found a lowfat one in the archives. Just this one http://www.theyeshivaworld.com/coffeeroom/topic/potato-kugelNovember 11, 2010 5:55 pm at 5:55 pm #708242SacrilegeMember
I cant vouch for it since I never made it… But here is a low fat Potato Kugel. Enjoy!
8 medium potatoes
2 whole eggs plus 2 egg whites, beaten
2 Tbsp. flour
1 Tbsp. pareve chicken soup powder
1/4 cup boiling water
1 Tbsp. salt, or to taste
1/2-1 tsp. pepper
2. Grate the potatoes and onion by hand or in a food processor. Let stand 3-5 minutes. Squeeze out excess liquid.
3. Place grated and drained potatoes and onions in a large bowl. Add beaten eggs and flour.
4. Dissolve soup powder in boiling water, and add to the potato mixture.November 11, 2010 6:10 pm at 6:10 pm #708243popa_bar_abbaParticipant
Yes, take any potato kugel recipe, put in half as much potatoes, onions, oil, and eggs.
Delicious and half as many calories and fat.November 11, 2010 6:15 pm at 6:15 pm #708244WIYMember

I guess my mom has mad skill. She does get a lot of compliments on her potato kugel.November 11, 2010 7:01 pm at 7:01 pm #708248minyan galMember
I once tried making low fat potato latkes. They had no ta’am. I think the oil must be married to the spuds to have any flavor.November 11, 2010 7:06 pm at 7:06 pm #708249bptParticipant
That’s like diet coke and a pizza; either have it or dont.
Low fat kugel. What a waste of a good potato. The way we test kugel is, if it sags in the plate, its good!
Make kugel the way your grandma made it; drowning in oil. Just have a smaller slab.
