Frum people too freely use superlatives. They’re always looking for an amazing barber, an amazing mechanic, an amazing ride to Baltimore for an amazing 9 year old son, an amazing wife, an amazing website to post amazing narishkeit on, etc.
It has nothing to do with being frum. People of all religions misuse that word.
Why the need for an amazing wife? Any mediocre or run-of-the-mill wife should suffice.
Is the question why superlatives are used at all, or why the only one used is “amazing” (as your examples show)?

The observation that frum people use too many suprelatives is incredible.
I live in Far Rockaway. Here the natives(not Jewish natives) use expletives;superlatives are a breath of fresh air:)
Last night’s baseball game was amazing.
The pitching on both sides were amazing.
But you got to know when to remove the amazing pitcher before his amazing arm wears out.
Actually it is those who are religious, more than those who are not who use the word.
I’ve been complaining about this for years. Amazingly, it hasn’t caught on.
Superlatives sometimes serve the same function as the expletives people don’t use.
