HELP WITH FOOD PESACH IS HERE

What do you make for the Sedar night main dish chicken? Has to be not roasted for Sedar and swimming in sauce to be in oven. I know corn beef on top of stove in water boiled is good but what about chicken. Please help any advice for diabetic, the matzah and wine is enough to kill you! Also any receipes for cakes with almond flour (my rav says it is kosher for pesach) and what is the best artificial sugar for cooking during the year it is splenda but not good for pesach.

I have a good question to ask – when you are invited to someones house for a shabbos meal and would prefer to keep the diabetes quiet how do you handle the meal. It is nearly impossible to know how to cover since the foods such as roasted chicken or salad could have barbecue sauce with tons or sugar or dressing with tons of sugar. It is so hard when you want to be sociable and accept someones invitation.
