Coriander Chicken with Peanut Dipping Sauce


This is one of my favorite dishes.  I could eat just the dipping sauce alone.  But it’s very good with chicken also!

Ingredients

1 (3 ½ – 4 lb) chicken, cuts in 1/8th’s

Marinade for chicken:

4 tablespoons soy sauce
1 tablespoon honey
1 tablespoon ground coriander seed
2 tablespoons minced garlic
2 tablespoons minced ginger
¼ teaspoon cumin
1 dash cayenne pepper

Directions

Mix all marinade ingredients together and coat chicken in sauce. Marinate in the refrigerator for 4 – 12 hours turning every few hours.

Bake chicken for 45 minutes – 1 hour or until brown in a 375 degree oven. Serve with peanut dipping sauce.

Peanut Dipping Sauce

4 tablespoons creamy peanut butter, room temperature

2 tablespoons soy sauce

2 tablespoons water

1 – 2 tablespoons packed brown sugar

1 dash cayenne pepper, or to taste

Whisk all ingredients until completely smooth. Serve at room temperature.
