My family has the minhag of eating gebrokts the last day. The way the minhag was explained to me when I was younger is that it’s to show that gebrokts is really muttar, we just don’t eat it. Since it’s muttar it can’t possibly make the keilim chametzdig. I did hear about some families that only eat gebrokts on the last day if the next year is a leap year. I wonder what their logic is. If it really is chametz from their perspective, how can they eat it on pesach?
