1/2 C cake meal
1 tsp baking powder
2 Teaspoons vanilla
35 minutes 350

Also, can anyone with experience with this problem, recommend Pesach food items that are safe for consumption (i.e. prepared cookies, yogurt,ice cream, etc)?

Non-Gebrocks Blondies
1 cup sugar
1 cup brown sugar
1 cup oil
4 eggs
3 vanilla sugars or 3 t. vanilla
1 cup potato starch
3 t. baking powder
1 bag chocolate chips (you could leave these out if you’re worried about allergies)
Beat everything together except chocolate chips. Stir in chips. Pour into 9×13 greased pan. Bake at 350 for 50-60 min.
We used 1/2 c. applesauce and 1/2 cup oil, to cut the fat, and the chocolate chips fell to the bottom. Still yummy, not as pretty.

Yogurt should be ok, check the label. Most prepared foods have the allergy alert, so it’s safest to make your own if possible. Probably healthier, too! It’s very hard – my relative has 2 VERY allergic kids, so I know what it’s like.

1 Cup Pot Starch

2 Teaspoons vanilla
Mix all ingredients except chocolate chips with an electric mixer then fold in the chocolate chips at the end with a spoon.
Bake for 35 minutes at 350 in a 9 x 13 pan.
