PBA: We don’t sell our real Chametz because we hold that is a Ha’arama that wouldn’t work on a D’oraisa anyway. So we only sell Ta’aroves Chametz, Chametz Nokshah, etc. So if we ever find Chametz on Pesach (and B”H we never have) then we would burn it.
Sam 2: Sure, as long as you write that into the shtar. If you sell “all my chometz,” it will certainly include all your chometz.

You are sure that if you find a bottle of whiskey in your garage that you can spill it down the drain, and that you are not stealing from the goy? (whiskey is chametz gamur, right?)
You are sure that your shtar writes out anything which is chametz gamur? What makes you sure of that? My shtar doesn’t. And my rabbi sells chometz both for people who are selling real chometz, and also for people who are not selling real chometz. And has never asked me whether I wanted him to sell all chometz or only non chometz gamur.

When one sells his chametz all his chametz belongs to the non jew and if one finds it on chol hamoed he should put it away with his other locked up stuff. If one did not sell his chametz and found then the halacha of burning applies.
Continue. And what makes you certain that he is not also selling any real chometz which he happens to have forgotten about and not found during bedika?
