If I may, I believe I have the solution to all your problems.
1. Choose a smoker
2. Decide what type of woodchips to use
3. Soak the woodchips
4. Get your smoker ready for cooking
5. Chose your meat
6. Dry-rub your meat
7. Place it in the smoker (245 degrees is good)
8. Wait (for brisket, 12-14 hours is good)
9. Enjoy
