Cabbage and Noodles


This is one of my family’s favorite side dishes.  I can’t make it often enough!

1 onion, diced

1 head cabbage, chopped

4 tablespoons canola oil

salt

pepper

paprika

2 packages broad egg noodles

Cook egg noodles according to package directions and drain.  In the meantime, sauté onion in oil.  When soft, add 1/3 of cabbage and sprinkle with ¼ teaspoon salt, 1/8 teaspoon pepper and ½ teaspoon paprika.  Let it cook down.  Add another third of cabbage and equal amount of spices.  When this has cooked down, add remaining third with spices.  When it is totally finished combine with noodles and mix well.
