Baked Rice With Mushrooms


This is a really easy side dish; you can even make it on a week night!

2 tablespoons margarine

5 scallions, sliced

3 cups chicken broth

½ cup red wine

1 (4-1/2 ounce) jar sliced mushrooms, NOT drained

1 (4 ounce) jar diced pimento, drained

2 cups uncooked long-grain rice

Preheat oven to 375 degrees.  Melt margarine in a large saucepan and add scallions and all remaining ingredients except rice.  Bring to a boil, remove from heat and stir in rice.  Pour into a greased 9 x 13-inch baking dish.  Cover and bake for 25 minutes.
