Lemon Poppy Seed Muffins, The Easy Way


1 (18-1/4 ounce) package lemon cake mix

1 (3.4 ounce) package instant lemon pudding mix

4 eggs

1 cup water

½ cup oil

¼ cup poppy seeds

Glaze:

1 cup powdered sugar

1 tablespoon vanilla

1 tablespoon lemon juice

Preheat oven to 350 degrees.  Beat together cake mix, pudding, eggs, water and oil. Stir in poppy seeds.  Pour into paper cup-lined muffin tins and bake for about 20 minutes or until tester is clean.  (Keep an eye on them).  Remove from tins to cool on wire rack.  When completely cool, combine glaze ingredients and mix well.  Drizzle over muffins.
