Brownie Biscotti

An easy variation on a great theme! 

1 (19.9 ounce) package brownie mix

¾ cup ground almonds

½ cup flour

¾ teaspoon baking powder

1 egg

3 egg whites

1 teaspoon almond extract 

Preheat oven to 350 degrees. In a large bowl, stir together brownie mix, almonds, flour and baking powder.  In a small bowl, whisk together egg, egg whites and extract.  Add to brownie mixture and stir until combined.  Divide dough into three and shape into logs. Place on greased baking sheets and baking for about 25 minutes.  Cut into slices and return to oven for 5 to 10 more minutes.  Let rest on cookie sheets briefly before removing to wire rack to cool.
