Grilled Chicken With Pineapple Mango Salsa


Here is a great chicken recipe that is even delicious reheated or eaten cold the next day. The fresh crisp taste of the mango pineapple salsa  makes this a satisfying yet light dish to serve for a delicious  Shabbos lunch.

4 boneless skinless chicken breast

Salt

Pepper

Garlic

1 16oz. can chunked pineapple, drained

1 mango, peeled and diced

1 small red onion, diced

1 Tbsp. lime juice

Pinch kosher salt

1 Tbsp. olive oil

1 tsp. chopped parsley

Preheat oven to 350 degrees. Spray a 9×13 pan with non-stick cooking spray.

Brush chicken with olive oil, sprinkle with salt, pepper, and garlic. Place in pan and bake 30-40 minutes.

While chicken is in the oven prepare the salsa. In a medium bowl, mix all salsa ingredients together.

Serve chicken with salsa on top.

To Reheat:  In a 9x 13 pan. Mix together 1/2 cup pineapple juice, 1/2 cup orange juice and 1 tbsp. lemon juice. Pour over the cold chicken and reheat on 300 for 15-20 minutes.

Remove chicken from pan and serve with leftover mango pineapple salsa.
