The Central Rabbinical Congress (CRC) has issued a notice regarding the consumption of Parmesan, Romano, and Asiago cheeses, particularly aged varieties. According to the CRC, these cheeses are classified as “hard cheese” under halachic guidelines, requiring a 6 hour waiting period before meat can be consumed.
This applies when enjoying dairy dishes and delicacies that include these cheeses.

This is not applicable for Sephardic people. (Shu”t Yabia, Omer helek 6, YD siman 7. Also see Yalkut Yosef, D 89:46). Sepharadim treat hard cheeses like any other dairy and is enough to wash the mouth. (Ben ish hai says the minhag in Baghdad was to wait 1 hr per month, but Rav eliyahu Mani is mid that minhag Yerushalayim is not to follow the humra of the Rama at all and treat like any other dairy).
