Papaya Rum Chutney


This is an interesting “condiment” that can be served alongside any meat dish – something special for the holidays.

5 or 6  papayas

2 teaspoons minced garlic

4 jalapenos, chopped

2 cups brown sugar

1-1/2 cups cider vinegar

½ cup rum

Combine all ingredients except rum in a Dutch oven and bring to a boil.  Boil for about 30 minutes; turn off heat and stir in rum.  Pour into storage container (glass or plastic, not metal), cool and refrigerate.
