Serves 4-6
For Salad:
1 package imitation crab sticks, roughly chopped
2 stalks celery, finely chopped
4 carrots, shredded
1 red pepper, finely chopped
� cup chopped sweet dill pickles (optional)
For the Dressing:
1 cup mayonnaise
2 Tbsp. white vinegar
� lemon, freshly squeezed
� tsp. kosher salt
� tsp. dried parsley (if you eat fresh parsley � cup chopped)
� tsp. dill
Place all your ingredients in a large mixing bowl. Mix with a spoon, making sure to incorporate everything well.� Serve on large platter with melba toast and fresh lemon.
