Butternut Squash Kugel


This is worth the effort of peeling squash although if you can find the canned version it will work just as well!

3 pounds butternut squash, peeled and cut into chunks

½ cup plus 2 tablespoons margarine, melted

¾ cup non-dairy creamer

2 tablespoons flour

½ teaspoon cinnamon

½ teaspoon ground cloves

½ teaspoon nutmeg

1 cup sugar

3 eggs

½ teaspoon coconut extract

½ cup graham cracker crumbs

¼ cup brown sugar

Preheat oven to 350 degrees.  Cook squash until soft and drain well.  In bowl of electric mixer, place squash, ½ cup melted margarine, non-dairy creamer, flour, spice, sugar, eggs and coconut extract.  Beat well.  Pour into 9 x 13-inch baking dish and bake for 50 minutes.

In the meantime, combine the remaining 2 tablespoons margarine, the graham cracker crumbs and the brown sugar.  Sprinkle over kugel and bake until set – another 15 – 20 minutes.
